Matsutake (Tricholoma matsutake), commonly called Pine mushroom ( 松茸 ), is a highly sought after mycorrhizal mushroom that is only found to grow in the wild in temperate climate at 3,500 meters above sea level. It can not be cultivated under artificial environment. It is a protected plant species and is often referred to as the “King of Mushrooms”.
The exceedingly slow growth of the Matsutake mushroom in the wild and its labor intensive harvesting contribute to the rarity of this rarest of mushrooms. It has to be harvested as soon as it leaves the soil, together with its roots. Once its pileus is opened and exposed, it rapidly loses its flavor and distinct taste. Production of Matsutake mushrooms starts at the end of June, peaks around August, and declines in the fall.
The nutritional value of the Matsutake mushroom is very high. It is rich in high quality proteins, unsaturated fats, roughage, vitamins B1, B2, C, PP etc. Besides being highly sought after for its unique flavor and taste, it also harbors great medicinal values.
